Often called a Chinese cleaver, these knives are thinner than your traditional cleaver and are known as more of a vegetable knife. The Chinese chef knife is very versatile, it can finely julienne vegetables for that professional look on the plate, it can easily crush ingredients like garlic for easy peeling and its larger than usual surface area is fantastic for scooping up and moving your ingredients around.
The new Masahiro blades come in two styles: the TS range and the TX range.

The TS range is made using Masahiro MBS-26 steel while the TX range is made from a steel known as Chromax which is a 3-ply steel, A core of V silver No.1 sandwiched between the softer stainless steel SUS410L.
Both ranges feature a rosewood handle and a 50/50 double bevelled edge with a HRC of around 60
