Tojiro is the brand name for knives made by the Fujitora factory in Niigata. Fujitora are one of the larger factories in Niigata, Japan specialising in premium knives for the Western market and make exceptionally fine products.
Tojiro products are quite broad in range and cover a wide range of materials and finishes. While some manufactures follow a clearly defined pattern in their manufacturing techniques, the different Tojiro knife ranges are all quite unique.
Without a doubt their top of the line Senkou range is the most special of the knife ranges. Used and endorsed by Heston Blumenthal himself. These knives are made from the finest Damascus steel wrapped around a VG-10 core and have micarta and steel handles. These knives feel quite heavy and are extremely sharp. The Supreme range is essentially the same knife with a hollow steel handle.
At the other end, Fujitora produce the Sha Ra Ku mono range, which has a similar construction technique to Global knives. These knives feature basic Japanese steel blade with hollow handles and we brought in to offer a more affordable Tojiro knife.
