A Chinese chef's knife is a versatile tool in the kitchen, thinner than a traditional cleaver with a razor-sharp edge, this tool can be used for finer work with fruits and vegetables as well as butchery. We present 2 ranges: One 'TS' range made from MBS-26 stainless steel which have a HRC of around 60. Secondly the 'TX' range made from 3 ply steel with a core of 'Chromax' carbon steel.
