Knife Sharpening: How it works
Professional Knife Sharpening at Knives from Japan
At Knives From Japan, we believe a sharp knife is essential – and we’re here to bring your blades back to their best. Located at 100 Great Portland Street, we offer a professional knife sharpening service tailored to Japanese and premium kitchen knives. Here you will find how to book.
How We Sharpen
All sharpening is carried out using a Tormek slow-speed water-cooled grinding wheel, followed by finishing on a variety of Japanese whetstones to refine the edge. This combination ensures precision sharpening that’s gentle on your knife and delivers a razor-sharp finish.

Repairs? No Problem
We don’t just sharpen – we repair, too. If your knife has a chipped edge or a broken tip, we can restore it. These jobs take a little more time, but we’re confident you’ll be pleased with the results.
What You Need to Know
- Drop-off point: 100 Great Portland Street
- Turnaround time: Around 2 weeks, though some repairs may take longer
- We only sharpen knives – no scissors, mandolins, or other tools
- Pricing: £5 per knife. Repairs are quoted based on the work required.
Japanese, High Carbon, and Stainless Steel
Our process works beautifully on Japanese high-carbon steels, which respond especially well to whetstone finishing. If your knife is a lower-grade stainless steel, we’re happy to advise if sharpening is worthwhile before we begin.
Whether you’re restoring a much-loved Japanese gyuto or just want your favourite knife performing like new, drop by Knives from Japan and let us bring back the sharpness.
