The Fujitora factory of Niigata Japan has produced what we consider to be the ultimate perfection in a blend of Japanese and European knife design. Tojiro Senkou knives, meaning Flash in English are insanely sharp. These knives are made out of the finest Damascus steel wrapped around a VG-10 core to provide a very hard cutting edge (Rockwell 60-62). The handles are made from Micarta material with a steel inlay in a shape which is very comfortable to use. There is also a special die cast bolster welded onto the handle of the knives, which provides a smooth touch and comfortable grip. The overall knife is as sharp as you could possibly imagine, but it has the weight and presence of a European knife. In our opinion these are as good as it gets.
Tojiro Senkou knives are used and endorsed by Heston Blumenthal, one of the world’s very few 3* Michellin chefs and are used by him and his staff in the kitchen of the Fat Duck restaurant.
