What is Yakiniku?
The history of Yakiniku BBQ is closely connected to Japan’s post-war food culture and the influence of the Zainichi Korean community. While the word Yakiniku literally translates to “grilled meat,” it was originally used in Japan to describe Western-style grilled dishes before evolving into the Japanese BBQ experience we know today.
Yakiniku became especially popular in Japan after World War II during the post-war rebuilding period, when grilling meat over charcoal became an enjoyable and affordable way to gather and share meals. Over time, it developed into its own unique style, shaped by Japanese tastes and a focus on quality ingredients, simple preparation and cooking over high heat.
Today, Yakiniku is one of Japan’s most loved dining traditions and is enjoyed both in restaurants and at home. More than just a meal, it’s a social experience centred around gathering with friends and family, cooking together and enjoying freshly grilled food straight from the barbecue.

Why charcoal matters in Yakiniku
Traditional Japanese grilling is often done using Binchotan charcoal, which is considered one of the highest-quality charcoals in the world. Binchotan dates back to the Edo period and has been used for centuries. It’s traditionally made from dense Japanese hardwood, often oak, slowly carbonised in a kiln until it becomes an incredibly powerful charcoal.
Japanese charcoal burns at an extremely stable temperature of 870–1000°C. Unlike regular charcoal, Binchotan produces virtually no smoke, odour, or sparks, allowing the natural flavours of meat, fish, and vegetables to shine through without affecting the taste. Binchotan burns:

The word “Teppanyaki” literally means “grilling on an iron plate” and is one of Japan’s most popular cooking techniques. Known for its versatility and rich flavours, teppanyaki cooking allows ingredients to cook quickly at high temperatures.
Crafted from stainless steel, the teppanyaki plate heats gradually and distributes heat evenly across the cooking surface. The durable construction also makes the plate easy to clean and dishwasher safe, making it ideal for regular use.

Separate tweezers are traditionally used to avoid cross-contamination during cooking. Straight tweezers are specifically intended for handling raw ingredients, while curved tweezers are for removing cooked food from the grill.
