What Kind of Machines do we use?

All knives are sharpened on slow spinning electric water wheel stones to avoid over heating or excess removal of metal from the knife. The results are excellent.

What kind of Edge does this create?

Our water wheels will create a straight edge on your knives.

Which angle do you grind to?

For Global Classic or other Japanese Knives we will sharpen to a 15 degree angle unless a special request is made. We will not sharpen below 12.5 Degrees as the cutting edge will be unstable. If an edge already exists we will try to match the existing angle edge.

What Grit do we use?

We have a variety of stones, ranging from 240 grit (for seriously damaged knives) up to 4000 grit finishing stones which will leave a nice polish on the blade. The technician assigned will decide how to treat your knife. Usually we will start on an 800 Grit and Finish on a 4000 grit.

Who Sharpens My Knife?

Our trained technician, Matt, either in store or in our facility in Chesterfield will sharpen your knives.

What Happens to my knife?

Your knife will be stored on a magnetic rack, until our technician gets around to the actual sharpening. It will be cleaned, polished and returned in a plastic sheath.

What are the results like?

We own and use a CATRA cutting test machine, used to test the sharpness of knives to ISO 8442.5

Using our sharpening wheels we can bring knife edges up to and in some cases surpass the sharpness the knives had when new out of the packaging. We have hit an ICP of +145. Your knife will cut through newspaper.

What is the best way to sharpen knives?

In our opinion, whetstones offer the ultimate best results when used correctly and can be chosen according to the brand of knife and preference of the user. Whilst we would like to sharpen everyone’s knives by whetstone, our arms and shoulders cannot handle it!

Can I post my Knives to you?

Yes, but please order the online sharpening service from the website where we will send out mailing bags to you. We will not accept knives sent to us in your own packaging as they have on occasion worked their way out of the envelopes.

What knives can you not sharpen?

We do not sharpen scissors, pocketknives, razors or any wood working equipment.

We do not sharpen single bevel knives. Serrated knives, bread knives and cleavers.
