Hatsukokoro kitchen knives are manufactured in Tosa, Japan. They use stainless steel all the way up to carbon steels like Blue #2 steel or White #2 utilising various construction methods both hand-forged and machine rolled. By blending both techniques, they are able to increase output without essentially changing the features that make handmade Japanese knives such sought after products. All the Hatsukokoro blades are hand finished, sharpened and polished by a team of well know craftsmen that have all been apprentices at the Takefu Knife Village collective.
The Hayabusa Rainbow Damascus series offers a remarkable blend of aesthetics and performance, crafted with a variety of core steels by Hatsukokoro. These knives feature a laser-cut profile and a lightweight design, perfectly balanced with their octagonal dark ebony wooden handles. The standout of this collection is the exquisite Blue2 core steel, renowned for its superior hardness and cutting performance.
The artistry in these knives lies in the subtle layering of copper and brass, creating a stunning rainbow Damascus effect with a slightly matte finish. This finish beautifully contrasts with the highly polished, mirror-like Blue2 core steel, resulting in knives that are visually captivating.
The Blue2 core offers outstanding sharpness and edge stability. While the high hardness means sharpening may require a bit more time and patience, the maintenance is relatively straightforward thanks to the stainless-steel cladding.
For such an exceptional blade, a subdued handle is ideal. The dark, single-piece ebony handle complements the blade perfectly, enhancing its elegance. The combination of Blue2 carbon steel and stainless cladding ensures these knives are not only affordable but also highly durable, with excellent edge retention.
The petty knife, a 15cm versatile small blade, gets its name from its primary function: "petty/paring", which means to trim or peel away the outer layer of fruits and vegetables. This knife is essential for preparing produce, with tasks ranging from peeling and coring to removing seeds and even trimming meat with precision.
