Yoshida works with one of the hardest stainless steel commerically available. ZA-69, manufactured by Hitachi Metals is one of the highest quality stainless steels available on the market. The core steel ZA-69 shares almost the same material composition as VG10. However, ZA-69 has slightly higher amounts of carbon, chromium, molybdenum and cobalt, which gives it strength, robustness and better protection against rust. Few factories have learnt how to take advantage of these ultra hard steels, but nevertheless these knives will retain their cutting edge for an extremely long time before needing to be resharpened. The ZA-69 has a hardness of 61-62 HRC, giving it a thin, razor sharp edge. The ZA-69 core is clad by a layer of Damascus steel which protects the ultra hard inner core. Very few factories have the proficiency to work with ZA-69 and these knives are hard to come by.
