Handmade in Takefu Village, Fukui Prefecture, this 21cm Gyuto is crafted by Takamura Hamono, a workshop led by third-generation blacksmith Terukazu Takamura. With decades of experience, Takamura has earned a worldwide reputation for producing exceptionally sharp Japanese kitchen knives that combine traditional craftsmanship with modern steel technology.
The blade features a VG10 stainless steel core, hardened to approximately 61± HRC. Allowing the knife to stay sharper for longer while delivering effortless cutting performance. The 21cm Gyuto is the Japanese equivalent of a Western chef's knife and is designed to handle almost every kitchen task with ease. From slicing meat and fish to chopping vegetables, herbs, and fruit, its thin, lightweight blade glides cleanly through ingredients with minimal resistance, offering outstanding precision and control.
The knife is finished with a Black Pakkawood handle and stainless steel bolster, providing excellent balance, durability, and a comfortable grip. Wash and dry by hand (not dishwasher safe).
