Created to celebrate 15 years of collaboration between KAI and renowned German chef Tim Mälzer, the Shun Premier Tim Mälzer Tantō TDM-1785 is a truly exceptional collector's piece. Limited to just 6,666 knives worldwide, this anniversary edition combines distinctive design, outstanding craftsmanship, and versatile cutting performance.
Inspired by the traditional Japanese Tantō, the blade features a straight spine and straight cutting edge, offering excellent control and precision. Its unique profile is ideal for a wide range of kitchen tasks, from preparing large vegetables and portioning meat to filleting fish and performing detailed cutting work.
At the heart of the blade lies an ultra-hard VG-MAX steel core, clad on both sides with 32 layers of Damascus steel. This premium construction delivers remarkable sharpness, edge retention, and durability while maintaining the flexibility required for professional-level performance. The blade is finished with the signature Tsuchime hand-hammered pattern of the Shun Premier Tim Mälzer series, which helps food release more easily during cutting by creating small air pockets between the blade and ingredients.
Exclusive anniversary details make this knife particularly special. The blade is adorned with Tim Mälzer's signature alongside the commemorative “15 The Legend” logo, while every knife carries its own unique serial number engraved on the bolster, making each piece one of a limited worldwide production.
The handle is crafted from beautifully grained brown pakka wood with an elegant ultra-matte finish, setting it apart from the polished handles found on other knives in the series. Enhanced with specially selected resins, the material offers exceptional durability, moisture resistance, and long-lasting comfort. Its symmetrical shape is suitable for both left- and right-handed users, while the full tang construction ensures optimal balance, stability, and control.
