The SAI-02 is Global SAI's carving knife and is perfectly suited for the task. It has a long narrow blade suitable for carving even slices of your favourite joint. It is quite a substantial knife with a lot of presense and is best suited towards larger cuts of meat. The knife has quite a similar profile to the chef's knives and can be used as a multi purpose slicing knife.
