Yoshida Hamono Co. traces its business back to the field blacksmiths of Kyushu Island of Japan. These local craftsmen were involved in manufacturing and repairing all kinds of different metal tools for agriculture, fishing, and cooking. Yoshida Hamono works to preserve many of the manufacturing techniques handed down from generation to generation.
These knives have a Super Aogami (Blue Paper) steel core with a very high hardness rating that is super easy to resharpen. The core steel is sandwiched between layers of stainless steel. These knives are made from some of the best materials without a high price tag.
As with all Carbon steel knives, these blades will react to any food they come in contact with and should be wiped down and cleaned well before being put away for storage.
The 17cm Santoku blade is the all-purpose kitchen knife that is mostly used in Japanese households, it can cut through meat, fish and veggies making it a go-to knife for most kitchen tasks.
