This Katana Saya Rough/Medium Combination Whetstone is the ideal tool for sharpening Japanese knives. It will wear slower than other sharpeners as is made from harder material. Choose a suitable side of the stone based on the knife's condition and bluntness. The higher the grit number, the finer the finish.

240 Grit for repairing damage to the blade edge and regrinding the cutting-edge angle.

1000 Grit for routine sharpening on a regular basis.

Use the small flattening stone periodically, to level your whetstone, by rubbing it back and forth along its surface, and adding some water.
