Mastercraftsman Takeshi Saji has been manufacturing knives in Takefu city for nearly 50 years and is considered one of the best traditional smiths in Japan. He creates many custom-designed knives using many different materials and we are delighted to sell some of his production knives. These feature VG-10 cores with Riveted Black Micarta Handles. These knives are sure to look good and work well in the kitchen. As all his knives are handmade, wait times and the stock availability of these items is extremely limited.
As these are hand-forged knives there may be slight differences from the images. These knives also come with a basic edge but do need to be resharpened before first use.
Santoku is a Japanese word literally meaning 'three ways' and is used to describe the three cutting tasks that the knife is designed to do; slicing, dicing and mincing. The shape of the knife makes it great for Western type of cooking because the blade is flat, deep and strong, which makes the knife brilliant for cutting up lots of heavy root vegetables, such as potato, parsnips and ginger.
