Fan Out in collaboration with Echigo Sanjo traditional knife blacksmith Hinoura Tsukasa have created a range of knives “like jewellery”. Each knife is hand forged with ‘Gobi’ Damascus steel a combination or brass, copper and stainless steel. Every knife being hand forged by Mr Hinoura is unique and different.
Hinoura Tsukasa being one of the most famous blacksmiths in Japan, is a 3rd generation blacksmith from Niigata. Mr Hinoura creates immaculate knives with recognisable patterns in the Damascus layer. Mr Hinoura’s knives are made to be perfect, with no distortions or gaps. Mr Hinoura uses very traditional techniques, from forging to hand sharpening, making one of his knives takes a tremendous amount of time and his knives are hard to get hold of. His knives are highly sought after in Japan and Europe.
Every knife is extremely sharp with an inner core of ‘Aogami’ (V Toku 2 Steel) Carbon Steel. The handles on the knives are plastic injected wood. Beautiful to look at and sure to turn heads, Hinoura knives are exceptional pieces to own and use.
Santoku is a Japanese word literally meaning 'three ways' and is used to describe the three cutting tasks that the knife is designed to do; slicing, dicing and mincing. The shape of the knife makes it great for Western type of cooking because the blade is flat, deep and strong, which makes the knife brilliant for cutting up lots of heavy root vegetables, such as potato, parsnips and ginger.
