The Shun Premier Tim Mälzer Series has been tailored specifically to the needs and requirements of professional chefs. In this premium series, the high-quality material properties of the well-known Shun Classic Series are combined with an entirely novel and commanding overall appearance. The blade is divided into three different textures: The blade's back down to its middle has been hammered to create a surface known as Tsuchime.

 

The small all-purpose knife that is known as the paring knife gets its name from its function. Pairing is defined as cutting away the outer surface and to removing the ends from either fruit or vegetables. Used for the preparation of fruit or vegetables in meals, other functions include the removal of cores, precision peeling, removing seeds to trimming meats.

 

The paring knife is a light-weight short blade with a pointed tip that is better suited for more delicate responsibilities that the kitchen knife would be too big for. The durable edge can suit more heavy-duty root vegetables or more deft actions like peeling and trimming.
