This is an absolutely great block set of knives that have a very sharp edge and and a handle that not only looks great but also has been ergonomically designed to make it easier to hold. It is specially loved by people that have a passion for mechanics or aviation and is cheaper alternative to Global Knives which is also a full stainless steel blade, however being cheaper doesn't make it a worse knife on the contrary it actually can compete equally with the global range and its a great investment.
It comes with a vegetable chopper that can be used for chopping soft vegetables, a santoku that is a great all rounder which is likely to be your most used knife and then a slicer which is great for filleting fish or carving meat and a utility knife and paring knife for the small tasks in the kitchen and its finished off with a chefs knife which is another great all rounder by more stronger and specifically for meat or bones.
History Of the Knives
The word Tamahagane means precious steel. Historically, the word Tamahagane has been known as a particular, very pure and high quality steel produced using traditional Japanese techniques. The Kataoka factory in Niigata Japan uses Tamahagane as its brand name, making exceptional knives that are unsurpassed in sharpness and edge retention.
Our Tamahagane Knives are all made with a 3 ply stainless steel constuction. The middle layer is VG-5 which forms the edge of the blade. This layer is exceptionally hard (61 HRC), it is as hard as VG-10 stainless steel but has superior edge retention.
The two outer layers are made of SUS-410 stainless steel, which is softer and more stain resistant in order to protect the cutting edge. In all the knife blade material is rolled and thinned to a thickness of just 2mm. Tamahagane Bamboo knives are given a bevelled edge of around 15 degrees, giving an incredibly sharp finish.
The knives are finished with a hollow stainless steel handles weighted to perfection.
