Kasumi label this knife as a Japanese Chef's knife, but it is in fact a Santoku knife and a really good one! Santoku literally means 'three ways' in Japanese. These knives are good for slicing, dicing and mincing. They make great all round knives, particualrly good for chopping up vegetables. The blade is quite flat, meaning that up and down chopping motions cleanly cut through the vegetable. The tips of the blades have points, allowing dicing and mincing. Santoku knives, previously unknown have become staples in many of our knife ranges.
