If you needed just one knife for your kitchen go for a quality chefs knife and if you are going for Global buy the G-2/AN. The G-2/AN is the best-selling Japanese kitchen knife ever made! It can slice, dice, chop, and really do anything that you need. A multi-purpose all round blade that is included in virtually every knife set produced. It has won dozens of awards over the years testifying to the popularity of the blade.
The G-9/AN is Global's classically shaped bread knife. It is a specialist knife, really for use with bread only. The teeth are made to saw through the crust of bread but could also be used for some tough meats, for example crackling.
The G-5/AN has been a long time favourite and one of the best selling blades in the original Global series. When Global knives first came to the UK, the shape of the blade was quite strange. A long rectangular shaped, flat blade with only a slight knife point. The G-5/AN is inspired by traditional Japanese Usaba knives, popular amongst professional chefs in the Tokyo area and a specialist vegetable knife. The idea behind the shape of the blade is that it encourages a straight up down chopping motion where the full blade length will come in contact with the chopping board and so go straight through the whole vegetable.
The G-3 is Global’s classic carving knife, long and narrow to carve those perfect Sunday beef joints. There is only one G series carving knife and it is a specialist knife that is not well suited to other tasks, but that should not really matter, because the best cuts of meat demand the best equipment. Having a super sharp Global carving knife will ensure all your cuts of meat are thin and tender.
The GS-5 is the little brother of the G-5 vegetable chopper, with the same shape of blade in a smaller proportion. These knives take their inspiration from Japanese Usaba (Vegetable Knives), the relatively flat parts of the blade are designed to chop through fruit and vegetables and come into full contact with the chopping board and give a clean cut.
The GS-11/AN is one of the more popular knives in the Global range and is frequently found in many of the sets where it fills the role of filleting, carving and 'general purpose' knife, hence its name. The GS-11/AN has a medium sized blade at 15cm which is good for filleting small fish such as sea bass. The blade is also flexible which makes it suitable for this purpose. It can also be used as a small carving knife and as it says, utility by name, utility by nature.
One of the best selling knives in the GS range, the GS-3 is a medium sized cook's knife that will perform a variety of kitchen tasks. It has a nice medium sized blade good for chopping, slicing and dicing and is useful whether you want to cut up vegetables or slice meat. It is really the smallest chef's knife notwithstanding the GS-1 which has a slightly different shape of blade.
The GS-35/AN is a mini Santoku knife, useful for cutting up small vegetables and fruit. Like its big brother the G-46, the knife is suitable for the three ways of the Santoku, slicing, dicing and mincing. The knife has a relatively flat blade for cutting and makes a good alternative to the better known GS-5.
The GSF-22/AN has been named a utility knife as it is really good for anything. Being in the GSF range it is also fully forged and quite a bit more robust than the GS-11/AN (the hollow handled version). It is a brilliant knife and often included in various block sets. Long enough as well to fillet fish or use as a small carving knife it really does pay homage to its title as a 'Utility Knife'.
The GSF-15/AN is the most popular petty knife in the Global range and is very often found in set combinations. Its little 8cm blade is good for all those small kitchen tasks, peeling, cutting fruit and small delicate kitchen work. This knife can cover all the tasks of the other GSF range and is a classic all-rounder.
