The Fujitora factory of Niigata Japan has produced what we consider to be the ultimate perfection in a blend of Japanese and European knife design. Tojiro Senkou DP (Flash) knives, meaning Flash in English are insanely sharp. These knives are made out of the finest Damascus steel wrapped around a VG-10 core to provide a very hard cutting edge (Rockwell 60-62). The handles are made from Micarta material with a steel inlay in a shape which is very comfortable to use. There is also a special die cast bolster welded onto the handle of the knives, which provides a smooth touch and comfortable grip. The overall knife is as sharp as you could possibly imagine, but it has the weight and presence of a European knife. In our opinion these are as good as it gets. Tojiro Senkou DP (Flash) knives are used and endorsed by Heston Blumenthal, one of the world’s very few 3* Michellin chefs and are used by him and his staff in the kitchen of the Fat Duck restaurant.
The boning knife is typically characterised with a very sharp point and narrow blade and primarily used in the preparation of meats such as poultry, seafood and beef. The Honesuki or boning knife features a distinctively Japanese style of a triangular shape that is very rigid compared to the Western-style boning knife.
