Kasumi Damascus sashimi knives come in 3 sizes; 21cm, 24cm and 27cm. These knives are modeled on the Japanese Yanagi Sashimi knives but are made with the Western style edge. These knives were designed for use with fish and the blades allow the chef to create long broad strokes. These knives can be used to fillet fish, but also work equally well as carving knives.
