The Shun Premier Tim Mälzer Series has been tailored specifically to the needs and requirements of professional chefs. The high-quality material properties of the Shun Classic Series are combined with a new and commanding overall appearance. The blade is divided into three different textures: The blade's back down to its middle has been hammered to create a surface known as Tsuchime. This is followed by a fine matt Damascus grain typical for Shun. The cores of the blades are made from hard and durable VG-MAX steel to provide incredible sharpness and a long-lasting cutting ability. The meticulously machined blade is paired with a brown, grained pakkawood handle.
Considered to be between a Chef’s knife and a paring knife, the Utility knife or ‘the Petty’ is an all-rounder when it comes to the knives within a kitchen at the Chef’s disposal. A convenient tool that can cater to cutting that the Chef’s knife would be too big for or when handling cutting jobs too large for a paring knife.
Perfect for most type of slicing, dicing and chopping but also capable of handling more heavy-duty roles such as the cutting of thick root vegetables and dense meat. The curved blade enables the rocking of the knife on a cutting board to mince fruit and vegetables quickly.
