This Katana Pearl 18cm Santoku Knife is the perfect all-round kitchen knife. Santoku means ‘3 Ways’ in Japanese, referring to the all-round suitability of these knives to chop, dice and prepare food as required. A great all-round Knife with a fluted blade for non-stick. This version is the larger Santoku with a 18cm blade. The Eastern range comes gift boxed with a wooden ‘Saya’ that offers the perfect protection for your knife which will keep it's incredibly sharp edge, sharper for even longer.
The blade has a 67 layers of VG-10 Damascus steel which blends the durability of carbon steel with the corrosion resistance of stainless steel, this gives the blade exceptional toughness. VG-10 steel is one of the most premium steels in Japanese culinary products as it hard and unbreakable, reaching a Rockwell hardness rating of us to 63HRC. The exquisite craftmanship in these knives can be seen in the elegant layered damascus pattern on the blade.
