Knives for Sushi at home
You can create Nigiri, Sushi Rolls and Sashimi, its up to you but the Knives you use are always the same
When preparing any Sushi you need to ensure that the fish is cut correctly. This is best done with a Yanagi Knife. A Yanagi is a specialist Japanese knife for slicing pieces of fish for sushi and sashimi. The single bevel is to allow professional chefs more control to control the thickness of the sashimi slices and make sure the cut is perfect for presentation and the long blade is to allow the chef to make long broad strokes to make sure that the cut is made in one go.
A Nakiri is a specialist Japanese knife for slicing, chopping and dicing vegetables, it is doubled edge unlike the Yanagi knife and has a more thinner blade which allows vegetables to be cut more easily. You don’t need to rock the blade to cut vegetables as a simple chop will be enough. Different parts of the knife can be used for cutting the vegetables in many ways. For Sushi rolls slicing Avocado for those California rolls or cucumber for those vegetarian sushi rolls, this knife makes it very easy.
Cutting Sushi Rolls
When cutting Sushi rolls, you will be cutting through vegetables and fish and for this you will need a multi purpose knife. This is called a Santoku knife which literally means three virtues as it can be used for many different purposes. They are also doubled edged and you will find atleast one Santoku knife in every cooking enthusiasts home.
